Today's experimentation involved making Uni snacks for my other half and i for the week! Double chocolate protein balls 🍫💪 I was about to save this for my eBook but these are too good not to be shared 😋 Double chocolate protein balls 8 pitted dates 1/2 cup natural peanut butter 1 scoop (1/4 cup) chocolate whey protein 2 tbsp coconut flour 2 tbsp oat flour 1 tbsp chia seeds Chocolate coating 1/3 cup coconut oil 2 tbsp cacao powder 1 tbsp granulated stevia (optional) (Microwave the oil in a microwave safe bowl for a minute then take it out (careful as the bowl may be hot) then spoon in cacao and stevia and mix till even) Method 1) combine first 4 ingredients in a food processor and mix till all ingredients have combined 2) pour in oat flour and chia seeds and knead into the mixture till combined. If mixture is too dry add a tbsp of water at a time until the mixture isn't too wet or dry. 3) roll the mixture into balls and place in freezer for an hour. If it is too sticky then try coating your hands (yes weird) with a bit of coconut oil to prevent the mixture from sticking to your hands. 4) after the balls have been in the freezer for at least an hour, quickly roll one ball at a time into chocolate coating and place on a plate with baking paper. Each ball will instantly set after they've been coated. 5) now eat your heart out! They should be kept in the fridge when not eaten and will last 2-3 weeks :)
