Dinner was DELISH! NomNom! Tonight's Weekday Veggie dinner: Grilled Zucchini, Squash, Broccolini, Bok Choy, Red/Green Bell Peppers, Onions, Minced Garlic with Olive Oil, Salt, Cracked Black Pepper, Dill, Chili Pepper flakes. Wrapped in aluminum foil an grilled on low for 20 mins. Also a chilled spinach/tomato pasta with olive oil, cracked fresh black pepper, fresh mozzarella, fresh diced tomatoes, minced garlic, and fresh basil. Easy to make: cook your pasta, add ingredients, and stir gently! And yummy fresh pineapple and green grapes on the side. IT WAS SOOOO GOOD! And look at how much food- but no meat, no carbs! During the week (veggie only time)- I have big bowls of fruit for snacks (pictured: orange slices, pineapple chunks)- while I try to mind my caloric intake (the key to dropping weight is the 'math' of calories- eat less than you are burning each day)- so in the first two weeks of my move to the weekday vegetarian lifestyle, I tracked my calories using the phone app- 'Lose It!' I was surprised to see how FEW calories I could eat, considering the AMOUNT of food I was eating! And it clicked- that's why I was losing weight so quickly! Huge bowls of salad, small portions of carbs, lots of water, big bowls of fruit and veggie snacks all day (hummus and carrots?! YUM!). I eat a ton of food- but the veggies have NO fat, no carbs, and so many nutrients. I eat as much as I want, and the pounds keep dropping off. Woooo Hooo!
